Meal prep. I have been there. Tried that.

I went through a phase where I cooked a ton of chicken, broccoli, and rice and put it in different Tupperware, perfectly portioned. Not only was it a ton of work on a Sunday, it wasn’t all that enjoyable.

What I have found is, even cooking for a family, if I can just do a few things for the week it makes a huge difference. Chopping vegetables, washing berries, batch cooking a protein or rice.

I also do a mental scan of my week ahead and plan 3 main meals, accounting for leftovers and one potential meal of eating out or take out a week.
